It all began in 2007, when we co-founded Auld D’Aleo Inc., food and beverage consulting firm based in New York City. Our most successful and most popular service was one that sold pre-mixed, alcoholic shots to the patrons of our client venues.
Everyone was happy. The service was a hit with both the patrons and with the venues where they were drinking. Over the next few years, we continued to grow our business by working with more and more of NYC's most popular and exciting bars, restaurants, clubs, and lounges.
In 2010, The Wall Street Journal published an article highlighting our unique service and our recognition and fulfillment of patrons' demand for something fun and innovative.
Eventually, many challenges in our industry began to pop up, which directly affected our business model. Our largest obstacle was the increasing regulation being implemented by the State of New York, regarding how mixed-alcoholic drinks and shots must be prepared and served to patrons.
In all fairness, these laws were designed to protect you, the patron. Any mixed-alcoholic item being sold in a liquor-licensed venue (basically any bar, lounge, club, or restaurant where you can buy a drink) must now disclose the alcoholic shot or drink ingredients and alcohol potency.
Additionally, these items needed to be made INSTANTLY, right in front of patrons as they order them from their bartender. This would ensure the freshness of the drink or shot being served and the sanitary environment in which the drink was prepared.
All of a sudden, our best seller, the Jell-O Shot (which we all know must be prepared hours in advance) became illegal to sell.
The additional cost, preparation time, and licensing which were now required for us to continue our original service made it nearly impossible for us to grow our business. In order to stay alive, we needed to completely change our business model in order to comply with these regulations.
In short, we needed to find a way to give bartenders the ability to make semi-solid alcoholic items, like the "Jell-O Shot", right before their customers' eyes at the moment they ordered them.
